Fish and Vegetable Rub
4 tsp ground white pepper
2 tsp sea salt
2 tsp finely ground dry oolong tea
Mix all ingredients together and use generously.
Makes 8 tsps.
Tomato Tea Salsa
4 Roma tomatoes, seeded and chopped
1 tbsp fresh lime juice
grated zest of 1/4 lime
1 tbsp of your favourite dry tea
1 jalapeno, seeded and chopped
To taste add the fish and vegetable tea rub
top with fresh chopped cilantro
Combine all ingredients and refrigerate for several hours.
The Japanese Tea Ceremony (Cha-no-yu) is a ritual that has raised the
preparation and drinking of tea to an art form that still flourishes
today.
